Sausage and Rice

Every once in a while, we have those meals where I stand at our pantry and just stare at what’s there. You know those days, hardly anything because you should have gone grocery shopping a week ago! Anyways, I threw this recipe together with what I had and it was a hit! Hope you enjoy it also!

Put on some rice to cook first. This way, it’s ready when the rest of your meal is ready. I always use brown rice and have not had any issues.
Slice and saute a link of Polish Kielbasa or some sort of sausage. Remove from pan.
Slice and saute a medium sized onion and some garlic. As that is finishing up, add a small can of diced tomatoes and drained and rinsed black beans. Add the cooked sausage.

You can either serve the mixture over the rice or mix it all together like we do here. I normally add some basil, pepper and garlic power to finish it off and top with a bit of parmesan cheese. Enjoy!

Wednesday Update

Well, I’m baaaaaccckkkk! LOL
I do apologize that it’s been so long since my last blog post. This summer has been so insanely busy. Believe me, I’m not complaining at all as it was an awesome summer! We were constantly busy, but busy having fun!
School is back in session and we are slowing getting back into our normal routine. I’m hoping, with that routine, to be able to blog daily on here and on my own personal blog. I’m so excited to back in touch with y’all :)

Shredded chicken sandwiches

Last night I made this for the first time and OMG was it fabulous! I have absolutely no idea why I have not done this before. I’ve made shredded pork, but always in the crockpot.  I took 3 chicken breasts and boiled them.  After they cooled down, I hand shredded them in the same pot I cooked them. (I saved the stock to use for a later date!) I then just drenched them in bbq sauce (going to attempt some homemade kind soon) and warmed it up. I placed the shredded chicken on  crusty buns and topped with extra sharp cheddar cheese.  An absolutely wonderful sandwich if I do say so myself.

Tuesday Tip…early morning risers

I wasn’t sure what to write about today for a tip. And then, I was woken up at 4:40 AM by my 2 year old. At 6:11 AM, my 4 year old made his way downstairs. Believe me, I thought of a tip!
Get a basket and fill it with baggies and/or small containers full of breakfast foods. This could be granola bars, cereal, dried fruit, etc. Then, before bed, fill up a glass full of milk and/or juice and stick it in the fridge and their level. When they come downstairs, they can grab their own breakfast and drink. If your little one can turn on the tv, at night before you go to bed, turn the channel to a kid friendly one so all they have to do is turn it on. Even if this buys you twenty minutes of sleep…it’s still twenty minutes of sleep. Now, excuse me while I start my third cup of coffee…

Couscous

A favorite side dish in our house is couscous, otherwise known as spider eggs. Normally, I use chicken broth in place of water and add in some parsley, powdered garlic and parmesan cheese. Yummy!
But, the other night, I decided to try something new. I cooked it in chicken broth, but on the side, I sauteed some red, green and orange bell peppers along with an onion. OMGoodness! Can we say delish!!!! I served this along side chicken drumsticks and some sort of veggie. Fabulous dinner that we all enjoyed and hope you do too!
